meat. Studies prove that there are significant differences
in beef quality between the various cattle breeds.
Piedmontese
cattle originate in the Piedmont valley in the Alpine regions of
Northern Italy. These unique cattle have evolved over the
centuries in a pure environment and are, today, a truly
efficient animal, genetically designed by nature to produce
low-fat, tender beef.
Unlike regular
cattle that have a gene that restricts muscle growth,
Piedmontese have a gene that allows unrestricted muscle
development, which is known as double muscling. Muscle
development in Piedmontese cattle is 14 percent higher than in
many other breeds of cattle. This double muscling allows
the production of tenderness in Piedmontese beef.
Piedmontese cattle have consistently proven to be the most
tender while being lowest in fat content. |
